Only the young leaf buds, which have a velvety silvery surface and many typical white hairs, are picked for this white tea specialty of the Dongzhai plantation in the Chinese province of Yunnan. The rolled leaves create a light but at the same tangy-vegetal infusion with a subtle note of wild peaches.
